Since the ancient times Polymnia sonchifolia is cultivated in Peru and other countries of Latin America for production of this plant's edible roots. The plant is also used for a raw material for production of sugar, insulin and spirit as well as a fodder. Research works have demonstrated that the plant's productivity is considerably affected by the age of sprouts and conditions of the plant growing. The second decade of February is the most propitious moment for roots embedding for intergrowing. Content of carbohydrates in a considerable extent is determined by conditions of plants growing. If roots are stored at decreased positive temperature the maximum hydrolysis of oligofructans occurs in three months.
